Chili peppers are categorized by heat levels via the Scoville scale. SCU (Scoville Heat Units) are based on the concentration of capsaicinoids, or the active component of chili peppers. Interestingly, capsaicin is a chemical irritant for mammals only, which means the heat from superhot varieties won’t bother birds or insects. Chili pepper categories are sweet and mild, medium, medium-hot, hot and superhot.
Most of us are familiar with green, red and yellow bell peppers of the sweet variety. They are classified botanically as a fruit, but used as a vegetable in recipes. Try them in sliced in salads for a nice crunch and added flavour. They are rich in vitamin C and antioxidants, and you can even freeze them for later use. Jalapenos are another easy-to-use chili pepper and taste amazing when chopped fine, and added to guacamole or refried bean burritos and enchiladas.

Chili peppers are easy to grow, so may want to try saving the seeds from produce to plant. Dry them out first, then plant in a seed starting soil mix and keep them moist. These are Mediterranean plants, so they need heat this time of year to germinate. Keep them on a heat mat or on a window sill over a heat register until they sprout, then they can be planted in your garden or greenhouse when the season allows.
